Ich möchte nur den einen Wunsch äußern, daß versucht würde, uns ein Referat über diese Frage — das wäre doch sicherlich durch Vermittlung der anwesenden Herren möglich — zur Verfügung zu stellen, in welchem die Überlegenheit — falls sie vorhanden ist — des Großbetriebes gegenüber dem Kleinbetrieb dargelegt wird und in dem uns mitgeteilt wird, in welchem Umfange nach Ansicht der ausführenden Techniker auf diesem Gebiete Ersparnisse in der Versorgung mit Brot auf fabrikmäßigem Wege möglich sind.
English translation: I would like to express just one wish: that an attempt be made to provide us with a report on this question—this would surely be possible through the mediation of the gentlemen present—in which the superiority—if it exists—of large-scale over small-scale enterprise is demonstrated, and in which we are informed to what extent, in the opinion of the practising technical specialists in this field, savings in supplying bread through factory production are possible.
The qualification “falls sie vorhanden ist” makes superiority a question for investigation, not an established premise. Lederer couples comparison of production scales with assessment of achievable savings, assigning practical technical expertise a central evidentiary role. The intervention’s significance lies in this demand for substantiation; it supplies neither findings nor a recommendation to adopt factory production.
